Dry Chicken Pickle Recipe Ingredients: 1 lb chicken breast, boneless and skinless

1/2 cup apple cider vinegar 1/4 cup water 1 tablespoon sugar

1 teaspoon salt 1/4 teaspoon black peppercorns 2 bay leaves

3 cloves garlic, peeled and crushed 2-3 fresh red chilies, deseeded and finely sliced (optional) // I used 3 smallish ones with the seeds still in. Instructions:

Cut the chicken into small bite-sized pieces. In a non-reactive bowl or jar (I used a 1 liter/quart canning jar), combine the chicken pieces with all the other ingredients. Stir well to combine, making sure the chicken is coated with the vinegar mixture.

Place a lid on the jar and refrigerate for at least 24 hours, up to 3 days. // I only marinated mine for 24 hours as I was short on time, but next time I’ll definitely leave it longer for maximum flavor! After 24 hours (or longer), remove the chicken from the pickling mixture and pat dry with paper towels.

Preheat your oven to 425F degrees. Place the chicken onto a lightly greased baking sheet (I lined mine with foil first) and bake for 15 minutes until cooked through. Remove from oven and let cool slightly before serving warm or at room temperature. Enjoy!
